Ingredients
- For the Roast Chicken:
- 1 whole chicken (about 4 lbs)
- 2 teaspoons salt
- 1 teaspoon black pepper
- 4 tablespoons butter, softened
- 1 lemon, quartered
- 4 sprigs of rosemary
- For the Roast Potatoes:
- 2 lbs potatoes, peeled and cut into quarters
- 4 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- For the Seasonal Vegetables:
- 2 cups mixed seasonal vegetables (carrots, Brussels sprouts, and green beans)
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional Gravy:
- 1 cup chicken stock
- 2 tablespoons flour
- 1 tablespoon fresh herbs (thyme or parsley)
Directions
- Preheat your oven to 425°F (220°C).
- Pat the chicken dry and rub with softened butter. Season with salt and pepper inside and out.
- Stuff the chicken with lemon and rosemary.
- Place the chicken in a roasting pan. Arrange potatoes around the chicken, tossing them with olive oil, garlic powder, salt, and pepper.
- Roast the chicken and potatoes for 1 hour 30 minutes, basting the chicken with its juices halfway through.
- For the last 30 minutes, add mixed vegetables tossed with olive oil, salt, and pepper to the pan.
- Check for done-ness: the chicken should reach an internal temperature of 165°F (75°C).
- For optional gravy, combine chicken stock and flour in a saucepan over medium heat until thickened. Stir in fresh herbs.
- Let the chicken rest for 10-15 minutes before carving.

- For crispier skin, try roasting at a higher heat for the last 10 minutes.
- You can substitute herbs or citrus according to preference.
- When using turkey, increase cooking time by approximately 30 minutes.
